Alligator Pears and Apples
This is a good salad made with avocado and apple that is unexpected but delicious.
2 avocados, peeled, pitted and diced
1 large red apple, cored and diced
2 tablespoons honey
1/2 cup raisins, soaked in water and drained
1 tablespoon hulled sunflower seeds
In a medium bowl, combine the avocados, apple and raisins. Drizzle with honey, and sprinkle with sunflower seeds.
Makes 6 servings.
1/4 cup lemon juice
2 tbsp. honey
2 tbsp. salad oil (like Grapeseed Oil)
1/2 tsp. basil
salt to taste
pepper to taste
Combine all ingredients in shaker container or glass jar with tight-fitting lid. Shake until all ingredients are well-combined. Chill until serving time.
Makes 1/2 cup; 1 tbsp. per serving.
Spinach Apple Toss
Makes a large salad; cuts in half easily.
8 slices bacon
2 red eating apples, with peel, coarsly chopped
2 x 10 oz. bags fresh spinach, leaves torn bite size (about 12 cups firmly packed)
Tangy Orange Dressing:
2/3 cup low-fat salad dressing (or mayonnaise)
1/3 cup frozen concentrated orange juice, thawed
Fry bacon until crisp. Drain on paper towel. Crumble or dice. Combine apple and spinach in large bowl. Add bacon.
Dressing: Stir salad dressing and concentrated orange juice together in small bowl. Pour over spinach mixture. Toss to coat. Serves 12.
